Have you ever been to an event and found the food tepid or just flat cold? It is an unsavory experience, isn’t it? Well, it is also a pity because chafing dishes a.k.a food warmers are designed to avoid such scenarios.

At this point, you are probably thinking, this only concerns caterers and restaurant owners. The rest of us can turn to microwaves and ovens during our house parties and dinners, right? Not quite. Chafing dish designs have evolved so much now that you can find a set to match even the simplest needs.

So, whether you are venturing into catering or host often, there is a chafer for every occasion. And here is the guide you need to point you in the right direction.

What Is a Chafing Dish?

A chafing dish is a piece of catering equipment used to keep cooked food warm using low indirect heat. It is made of different components which include:

  • A food pan
  • A cover
  • A water pan
  • A frame

The chafing dish is made of food-safe metal and its cover can either be retracted or removed when serving food.

A low but steady heat source is then placed below the metallic base of the dish/food pan where it heats a tray of water to emit steam. This steam then consistently warms the chafing dish thereby keeping the food inside it warm. The frame holds the entire setup upright.

However, while the working principle is the same for chafing dishes in general, they come in different shapes, sizes, and finishes. Their sources of heating also vary between electric and non-electric.

What Is a Chafer Dish Used For?

Chafing dishes are mostly used in buffet-style food service at restaurants, banquets, dining halls, and similar settings. They are ideal for this because buffets usually cater to many diners. It is thus essential to keep the food warm so that they all enjoy a quality meal.

Benefits of Using Chafing Dishes

Chafing dishes offer lots of benefits besides just keeping food warm. If you are uncertain whether they are a worthwhile investment, here are some additional benefits to consider.

Better Food Service

Using chafing dishes simplifies food service for both staff and diners.

The staff only need to serve the food into the chafers and top them up if they run low. It is easier and quicker compared to wait staff running back and forth between diners and the kitchen to process food orders.

Similarly, diners get served quicker without the delays of reheating food. A chafer buffet-style setup also gives diners access to all the tantalizing food options on offer. This can be especially beneficial in a restaurant setting where you need to attract as many diners.

Convenience

Quality Chafing dishes are easy to clean and maintain. Their food-grade metal material remains pristine even after scouring and can handle heat sterilization processes.

Alternatively, if you would rather avoid cleaning altogether, you can opt for disposable chafing dishes. More so for events like home parties that you only hold occasionally.

Maintaining Food Quality

Any chef worth their seasoning will tell you that reheating food multiple times is likely to distort its quality. The food could become overcooked, lose flavor, or become dry and chewy.

Using chafing dishes to keep food warm using low indirect heat can help you avoid such failures in multiple ways:

  • Chafers eliminate the need to reheat food severally because they keep the food warm after it is cooked.
  • The low indirect heat used in food chafers ensures that the food does not overcook or dry out.
  • Using chafers reduces the number of times food needs to be handled at different stations. This can help avoid contamination.

Aesthetics

Appealing food presentation is a crucial factor regardless of whether you are catering a wedding banquet or a family brunch.

Of course, you can invest in normal serving dishes to achieve that.

However, the right chafing dish buffet set delivers more benefits:

  • It enables you to create a classy mouth-watering setup while also keeping your meals warm and fresh.
  • Chafers come in different designs, shapes, and trims which allows you to curate the look and arrangement that best suits your events or establishments.

Safety

The heating component of modern chafing dishes is more refined than that of older designs. They are thus safer for users and fairly more energy efficient.

Moreover, you have a variety of options to explore based on what you reckon is safest for your application. For example, if you worry about the risk of open flames, you can consider options like induction-heated or electric chafing dishes where no flames are involved.

Energy Efficiency

Chafing dishes enable you to keep large portions of food warm until service is complete while using a minimal amount of energy.

This is far more energy-efficient and cost-effective than reheating separate batches of food on request or multiple times during one food service whenever the food gets cold.

Types of Chafing Dishes

Chafers vary based on specific aspects of their design such as shape, size, or their method of heating. Let’s run through the different design factors and get an idea of what they offer, shall we?

Shape

Chafing dishes are designed in various shapes to suit different types of foods and service preferences.

  • Round chafing dishes – ideal for stews, chili dishes, sauces, and more because they make it easy to stir them evenly without bits of food getting stuck to corners. They can hold varying volumes of food while remaining space-efficient.
  • Rectangular chafing dishes – they are quite versatile and can serve entrees as well as meat, poultry, vegetables, or starches. They work well for large food portions given their wider surface area and even heat distribution.
  • Square chafing dishes – the compact square dimensions make them suitable for serving arrays of finger foods, appetizers, dips, or side dishes.
  • Oval chafing dishes – these offer a large surface area and can sometimes be used in place of rectangular chafers or to serve starters like dumplings, or bitings.

Size

The capacity of chafing dishes typically ranges between 8.5 to 3.8 liters (9-4 quarts). The different sizes are classified into the following 3 categories:

  • Full size – these are the largest and have a capacity between 8.5L to 9L (8-9 quarts). They are often rectangular and used for mains but are equally ideal for large catering situations.
  • ⅔ Size  – these mid-sized chafers hold between 4.7L to 6.6L (5-7 quarts).
  • Half size – the capacity of these chafers is usually between 3.8L to 4.7L (4-5 quarts).

That said, catering needs differ greatly based on various factors. It is thus important to note that you can order custom-size chafers if you identify the right chafing dish supplier. This may be especially helpful if you require a specific style of commercial chafing dishes or private label designs.

Electric and Non-electric

Electric chafing dishes rely on an electric power source to keep the food warm. They do not feature any open flames because the heat is delivered either through induction or an electric coil. Subsequently, electric chafing dishes can be classified into two:

  • Electrical heating chafing dishes – in this approach, an electric coil heats the water below the chafing dish which keeps the food warm. Some have settings where you can control the level of heating that you prefer.
  • Induction chafing dishes – these chafing dishes are placed on an electromagnetic induction panel. The panel is heated using an electric current and the heat from the panel keeps the chafing dish warm. This method offers very controlled, even, and consistent food temperature.

In contrast, non-electric chafing dishes rely on a flame from a low-burning fuel to heat the water that keeps the food warm. The fuel is usually placed in a small can/fuel holder that can fit under the chafing dish.

Material

Chafing dishes are often made using stainless steel. The quality of the stainless steel determines the durability and overall production satisfaction that the chafing dish will deliver.

Chafers made of high-grade stainless steel are more likely to last longer as they are less susceptible to damage like dents. Their better density also facilitates better heat distribution and retention.

On the other hand, chafing dishes made from lower-grade stainless steel may be cheaper but they tend to be less durable. Drawbacks like low heat retention and unreliable heating are also common.

Types of Chafing Dish Covers

Chafing dish covers keep your food covered to retain heat and protect it from contamination. The designs of the covers vary depending on the design of the chafer. They are an important factor to consider when choosing chafing dishes because they play a key role in the kind of food service experience you would like to create.

Lift-off Covers

Lift-off chafer covers usually have a handle that you can pull away from the chafer to open it. They can be dome-shaped or flat.

This cover style is suitable in instances where wait staff are on hand to assist diners in uncovering the chafers during food service. Otherwise, it can be inconvenient for diners to juggle lifting the lids while holding their plates.

Glass Top Covers

Glass top covers are often coupled with stainless steel such that the glass serves more like a display window. It is important that the glass is tempered so that it does not break due to the heat.

The glass makes for an innovative design that:

  • Allows diners to see the food and get enticed.
  • Can help reduce heat loss in the chafer because diners do not have to open every chafing dish to see what is inside, they can often sneak a glance through the glass.

Roll Top Covers

True to their names, roll-top chafer covers are retractable. You only need to push them back using a handle and they slide down to the back of the chafing dish leaving it open. They are easy to maneuver with one hand and thus work well even in an unattended buffet.

Hinged Covers

Hinged chafer covers are attached to the base structure of a chafing dish. However, unlike a roll top, they do not glide off to the back of the dish; they lift open to a 90-degree angle while remaining attached to the dish.

Hydraulic Covers

Hydraulic chafing dish covers are made using a special hinge that allows the lid to slowly fall shut automatically.

This is a great alternative to typical hinged covers because chafing dishes do not have to remain open all through a food service. They can close when not in use and diners or staff can open them when necessary.

Types of Chafing Dish Finishes

Chafing dish finishes determine the aesthetics of your culinary setup. Fortunately, there is a rich selection to choose from depending on the type of look you prefer.

Matte Finish

A matte finish delivers a refined look that is reserved. It can work great for settings where you simply want a decent food service setup without much fanfare. This finish style is quite durable too as its matte nature keeps any dents or scuffs muted.

Mirror Finish

A mirror finish is the complete opposite of a matte finish. It is highly reflective and delivers elegance and sophistication in spades. It is a go-to pick for fine dining experiences and requires careful polishing and maintenance.

Satin Finish

Satin chafer finishes are smooth and present quite well even for fine dining. They require care but are not as high-maintenance as mirror finishes in terms of polishing and scratch protection.

Hammered Finishes

The hammered finish gets its name from the dimples on its surface. It appears as though an artisan hammered the stainless steel to make the dimple embellishments. It is a unique look from the silver look of other finishes. Its high-brow glossy design and industrial touches make it fit well in both middle and fine-dining setups.

How to Use Chafing Dishes

Chafing dishes are fairly easy to use as long as you understand what type of chafing dish you have at hand. Let’s dive into a brief step-by-step guide to ensure you get it just right.

1. Identify the Type of Chafing Dish

Chafing dishes have different types of heating approaches. As we have distinguished above, you can have an electric, induction, or non-electric chafer. These details should be well outlined in the packaging so be sure to read and check out your chafer so that you know what you are working with.

2. Set Up the Service Area

Clear your setup table and prepare it to your liking. There should be no clutter or wetness to ensure fire and electrical safety. The table top should be steady and even. This guarantees that it will hold the weight of your chafing dishes and keep them on an even keel for equal heat distribution.

3. Set Up the Chafing Dish

Place the frame of the chafer on the cleared surface and place the water pan on top of it. Pour an inch of hot water into the water pan.

If you are using a non-electric chafer, get your fuel source(s) open and place it in the provided fuel holder. Place the holder(s) under the chafer and light them.

Tip: Always read the fuel manufacturers’ instructions carefully and adhere to them.

Alternatively, if you are using an electric or induction chafer, plug the electric cord into a power outlet and turn it on.

4. Warming

Allow the chafer to heat up for about 15 to 20 minutes. During this time, you can serve your cooked food in the chafer dish.

Once the time has elapsed, carefully place the chafer dish on top of the water pan. Ensure that it is well-supported by the frame and the whole setup is stable.

Tip: Chafing dishes get hot and retain heat. It is crucial to always handle them with heat-safe gloves.

How Long Do Chafing Dishes Keep Food Warm?

Technically, as long as there is a heat source and there is water in the water pan, the chafing dish will continue to keep the food warm.

However, it is best to limit the use of a chafing dish to the duration of a food service. This is normally about 2 to 6 hours.

Why?

Well, even though the heat in a chafer is low and indirect, it has a cumulative effect. This means that if the food is left in there too long it can begin to overcook or dry out which are some of the issues a chafing dish is designed to avoid, in the first place.

Do All Chafing Dishes Require Water?

No.

Induction chafing dishes, in particular, are designed using a unique system that eliminates the need for a water pan but still keeps the heating method indirect. It works as follows:

  • Induction chafers have no frames and thus the food pan sits atop an electromagnetic panel.
  • The panel is heated using electricity and transfers the heat onto the chafing dish.
  • The chafing dish then keeps the food warm.

Factors to Consider When Choosing Chafing Dishes

So, what exactly should you consider when making that final choice between full-size and half-size chafers or hammered copper and mirror finishes? Yes, you guessed it. Consider your chafing dish needs and applications such as:

Type of Food Service

What type of events or settings do you need chafing dishes for? Is it fine dining or a simple outdoor barbecue?

The answers here will help you determine the right type of chafer aesthetics you require as well as what kind of energy source would be viable in that setup.

Capacity

Chafing Dishes The Complete Guide-14

Source: truercatering

The number of diners you cater to during a normal food service should determine the size of chafing dishes you invest in. Full-size chafers, for example, may be better for large numbers because they would minimize the number of times you have to replenish your chafing dishes.

Quality and Price

Chafing dishes are not made equal. Their standards of quality vary as much as price.

The secret here is to aim for the best value for your buck. If you are investing in a set of chafing dishes for long-term frequent use, consider splurging a little and getting high-grade ones. This means quality material and meticulous finishes that do not show dents at the slightest bump.

However, if you are on a tight budget, explore mid-range chafers from credible manufacturers. They are likely to serve you well and longer. You can also explore options such as buying chafing dishes wholesale directly from a manufacturer. It may be cheaper than a retail purchase.

Portability

Food services like catering events often require lots of equipment transportation. This can be a challenge if your chafer dishes are very heavy or take up lots of space.

Therefore, if this is a concern for you, consider easily portable chafing dishes with features like stackable frames or space-saving shapes and sizes.

One Response

  1. I am just starting to use buffet style serving in my home. Previously big family meals were served family style. I have been using aluminum pans for my water and for my food. I was thinking of buying steel/metal pans for my food because of the lids. The alumnium lids do not work well and using alumnium foil is worse. Can I use full size aluminum pans for my water and steemetal pans for my food? Need to make my purchases in phases.
Thanks, enjoyed reading the article. We received a gift of a round chaffing dish with the glass lid. We love it.
